INGREDIENTS:

• 1.5 cups milk
• 3/4 cup sugar
• 1.5 cups coffee beans
• Pinch of salt
• 1.5 cups heavy cream
• 5 large eggs
• 1/4 teaspoon vanilla extract
• 1/4 teaspoon finely ground coffee

RECIPE:

1. Take a sauce pan.
2. Now heat milk, sugar, coffee beans, salt and 1/2 cup of cream in the saucepan until it is steamy.
3. If the mixture becomes warm, cover and remove it from the heat.
4. Let it be aside for 1hour at room temperature.
5. Now take a medium size metal bowl.
6. Pour the remaining 1cup of cream in it.
7. Take a large bowl.
8. Then set on ice over a larger bowl.
9. Now set a mesh strainer on the top of bowls and keep it aside.
10. Reheat the milk and coffee mixture.
11. Now, in a separate bowl, whisk the egg yolks together.
12. Then slowly pour the heated milk and coffee mixture into the egg yolks.
13. Whisk it for some time, so that the egg yolks are tempered by the warm milk.
14. Now scrape the egg yolks back into the saucepan.
15. Then stir the custard mixture constantly over medium heat until the mixture thickens for over 10minutes.
16. Now press on the coffee beans in the strainer to extract coffee flavor.
17. Then keep the mesh strainer aside and mix in the vanilla and finely ground coffee.
18. Now stir it until it becomes cool.
19. Chill it in the refrigerator.
